Charles Tortoe is an Associate Professor of the CSIR-College of Science and Technology affiliated with the University of Cape Coast, Cape Coast, Ghana. He is a Director and Chief Research Scientist of the Council for Scientific and Industrial Research-Food Research Institute. He completed his Ph.D in Food Science and Technology at the University of Greenwich, United Kingdom, and obtained his BSc with honors and MPhil Botany in Microbiology, from the University of Ghana, Legon.

He holds Certificates in Post-harvest Technology, Food Packaging, Product Development and Marketing, Quality and Food Safety Management in Food Industry, Agri-business Development, and Food Supply Chain Management all from the Wageningen University in the Netherlands. Other certificates include a Certificate in Biosafety Assessment and Regulation of Agricultural Biotechnology from the Institute for Plant Biotechnology for Developing Countries, Ghent University, Belgium; Certificate in Project Management Professional (PMP) from the Ghana Institute of Management and Public Administration (GIMPA), Accra; Certificate in Executive Leadership from Ghana Institute of Management and Public Administration (GIMPA), Accra; Certificate in Leadership in Management and Administration from the University of Ghana Business School, Legon, Ghana; and Certificate in Managerial Leadership from the Management Development and Productivity Institute (MDPI), Accra, Ghana.

He has led and managed several international and local-sponsored projects to their successful conclusion. He is a member of several professional bodies and has authored and co-authored more than 300 scientific and technical publications.  He is a reviewer for Frances Taylor, Elsevier, Springer and Wiley Publishers, and journals including International Journal of Food Science and Technology, Journal of Food Quality, Journal of Food Engineering, LWT-Food Science and Technology, and many others. 

His area of specialization includes but is not limited to (i) Food processing and preservation of root and tuber crops, fruits and vegetables and cereals and legumes, (ii) Development of nutritious specific foods for human growth, and (iii) Product development, food security, food safety and quality control, Hazard Analysis Critical Control Point, technology transfer to processors, establishing Micro-Small-Medium Scale Enterprises on food commodities in Ghana.
